The improved technology of ,,Dambalkhacho’’ has been introduced to producers

The meeting was held with the traditional producers of ,,Dambalkhacho’’ within the framework of the project ,,Elaboration of technological instructions for production of national products ("dambalkhacho ", cheese ,,Tenili’’, cheese "Tushuri guda") of the Scientific-Research Center of Agriculture. The project aims at ensuring product safety, increase the competitiveness and introduction of improved technology developed by the Center’s Research Division of Storing and Processing of Agricultural Products and improved milk processing industries recognized by the National Food Agency. At the meeting, the producers introduced new, improved technology for the production of "dambalkhacho" in the framework of the project, which involves the thermal processing of raw milk and the introduction of bacteria of pure crops and reduces the duration of producing product from 72 hours to 14 hours and makes the products safer for consumers.

Within the initiative of the Ministry of Environmental Protection and Agriculture of Georgia, in 2012, the National Intellectual Property Center of Georgia registered "dambalkhacho" in the State Register of geographical indications. The technologies and culture of its production have a status of a monumental cultural heritage.

The meeting was attended by the Deputy Minister of Environmental Protection and Agriculture - Iuri Nozadze, by the Head of Agriculture and Food Department - Tengiz Kalandadze, by the Director of the Scientific-Research Center of Agriculture - Levan Ujmajuridze and by the representatives of the National Agency for Cultural Heritage Preservation and National Intellectual Property Center.
